People who make bread, specifically by hand, what adjustments do you make when using wholemeal flour?
I'm wondering if it's worth me putting in extra yeast to help it rise better?

@alexisbushnell@toot.wales Probably better to add some gluten to give the yeast something to build structure with. You can often buy vital gluten in grocery stores or health food stores. Good luck!

@alexisbushnell@toot.wales A little more water, like 65%, and a bunch of extra kneading. Let it rest for half an hour, then knead, and do the same again, before letting it fully ferment. It still won't be as springy as white flour, but it should rise properly.

@alexisbushnell@toot.wales I rarely use all wholemeal, I mostly do 50/50.because it's so dense otherwise. I haven't found extra yeast helps. But extra proving can help a bit.
