God, I'm an idiot.
TIL that the Strix Halo machine that runs my homelab (Proxmox, Kubernetes and llama-server) has a power button to increase the power limit from 55W to 85W to 120W.

The button is supposed to light up green/yellow/red to indicate the mode, but on Linux the LED doesn't work. I never even noticed the button. Doesn't even look like a turbo button. More like a shuffle function.
