@colo_lee@mstdn.social Oh, good! Glad to hear those similarities. Potatoes are on my list to try next year. Eggplants are really pretty, but I’m not a big fan of them as food.

I've been doing eggplant fusion dishes this summer and really liking them: eggplant rollatini but filled with chiles and corn in a mole sauce, or Sichuan eggplant with our chiles and salsa macha instead of fermented broad beans. It has raised eggplant in my vegetable esteem...
