@SunnJax@tech.lgbt potatoes are very satisfying to grow. And so many varieties.
I've been doing eggplant fusion dishes this summer and really liking them: eggplant rollatini but filled with chiles and corn in a mole sauce, or Sichuan eggplant with our chiles and salsa macha instead of fermented broad beans.
It has raised eggplant in my vegetable esteem...

@colo_lee@mstdn.social I think I have some leftover eggplant stigma from growing up. But maybe it’s something I can add to my experiment list since it grows well.
