@ScruffyJunco The answer is yes, you can change sugar amounts, but there are limits to what you can do and still have a safe, nicely jelled jam/jelly. Here's the extension guide on making changes https://www.ndsu.edu/agriculture/sites/default/files/2024-03/fn2102.pdf For jam/jelly it mostly depends on the type of pectin, some need full sugar, some can be low or now sugar. Pomona is my favorite pectin for making low sugar jam/jelly. Pomona Pectin recipes (flexible sweetener options...

@ScruffyJunco The calcium to make it comes with the Pomona pectin. Since their pectin is derived from fruit only you add it to activate it. From their website: "Pomona’s Pectin is activated by calcium, so calcium has to be present in the mixture either naturally or added by you. Since most people don’t know the calcium content of their fruit, we recommend a calcium water amount in every recipe to be sure there is calcium in the mixture." https://pomonapectin.com/faqs/

I've got a start on my Fall Reading Shelf! Once a season I like to go through my books and put the ones I want to read on a shelf together. It gives me something to look forward to and makes it easy to pick a next book. This fall: fantasy, scifi and new skills (plus a big book of crosswords). Goals: Make a first project on a frame loom! Learn to punch needle evenly! Practice pouring beeswax candles! (Secret bonus goal, dehydrate apple slices with maple sugar & cinnamon thi...

Yay Friday! The goal for this weekend: baking! I'm behind and bread, granola, bagels and maybe something fun like donuts or scones or cookies is on the agenda. Also there are plums and tomatoes and peppers to pick in the garden. Our flowers have taken off at last so walking in the garden means carefully maneuvering around the various butterflies and bees. In other news, I recently set up a pollinator watering station (bird bath for bees and butterflies) and it works! They really love...

Other fun thing, on my way home yesterday I stopped at some of the yard sales and I found this! It's going to be a Christmas gift for my daughter. The lady selling it wanted to be sure I knew it was very old and some pieces were loose. I assured her we would be able to repair it carefully and that it would be absolutely loved. We were both really happy about that. I have a washstand from my great-great-grandma and it has the same feel, so it's definitely old and really be...

@rationaldoge That's great! It'll be really nice when they finish the next round of chargers under construction here in Wisconsin. And if you like the doughnuts, there's even an episode from PBS's Wisconsin Foodie about how Kwik Trip makes them. https://pbswisconsin.org/watch/wisconsin-foodie/kwik-trip-glazers-glazer-bread-pudding-6eillt/
