Results of the first night of cherry baking:
I made a sour cherry frangipane using a recipe from "The Elements of Baking". Fabulous book, for adapting baked goods to be dairy-, egg-, and/or gluten-free. The pie is really good, except I regret making my condensed milk from soy instead of coconut.
Cherry-banana fruit leather tastes awesome, with a hint of caramelised banana flavour.
And I dried some chunks of banana and tossed with citric acid to get sweet/sour banana snack.

Kate Aitken to the rescue! Making a sour cherry pie, and have abandoned internet recipes. I forgot my bookshelf holds my MIL's copy of the Kate Aitken cookbook. I learned to cook with this as a teenager, and would always guffaw at the "your daughter is launched" section at the end, picturing my mom smashing a bottle into my side, as for a ship. Looks like a good basic pie recipe. The phrase "nowadays apples are available the year round" is something! #KateAitken #Cookbook #CherryPie
