So, I looked into it and asked around. PayPal offers some options like "Pay in 4" and 'Pay in 3" and 'Pay Monthly" depending on the country, so that is a potential option that I could offer for non-commission pieces, or for commission pieces where the buyer would prefer that. Alternatively, Stripe offers sellers the option to set up payment plans for customers! So, this is something I need to look into further.
