They taste different. I like sweet bell peppers too, but green gives a green pepper flavor they lack. Using both is ideal, but I appreciate either alone too. Or poblano!

They definitely taste different, hence me calling the green peppers “shitty” :) I find that they taste particularly vile, and growing up that was the only pepper ever used in our meals so I thought that I hated all peppers. Nope, just green bell peppers.
