My wife got 2 beautiful, fairly large, aubergines from a neighbor. Which ranks as pretty-great: she won’t eat them, but knows that i love them. Since i’m feeding myself tonight, it comes down to what I can actually make edible, which it turns out is just roasted aubergine. Now, i’m not saying that i could’ve made a whole supper out of one of them. But maybe, just MAYBE, i shouldn’t have cut up both of them—as, it bears repeating, a meal for ONE human person. 😆
