I pop three eggs in a pan, add salt and cover with four slices of toast. Flip when the eggs are done and drop on a slice of cheddar and ham, some rucola. When the toast is toasty i just fold 'em over at th egg-seam.
I call it Alabama eggs - because they’re in bread.

My wife makes something similar, but this is an interesting twist. Totally stealing that name for any egg sandwich, though.
